About Our Custom Processing

Since 1952 Straka Meats has been offering complete custom beef, pork, and lamb processing. Orders are processed according to your specifications. All custom slaughter is done every Wednesday by appointment only, so please call in advance for available dates and times. Straka Meats is HACCP certified, state inspected, and animal welfare certified. We also offer custom curing and smoking of hams, bacon, fish, and turkey. Please call for more information.

CUSTOM BEEF PROCESSING

Straka Meats only handles locally raised beef from family farms. Our beef is dry-aged in our special coolers for tenderness and flavor. Please call 608-546-3301 for pricing.
A half side of beef has a hanging weight of 400#. There is about a 35% cutting loss on each half due to the bone and fat that is cut away. Each half consists of:

CUSTOM PORK PROCESSING

All pork from Straka Meats is raised on local farms and processed to your specifications. At Straka Meats, we offer whole hogs or half hogs. Average hanging weight for a whole hog is 160-180#. Hanging weight for half a hog is 80-90#.
